- For every cup of rice, add 1 1/2 cups water.
- Bring the rice to boil, uncovered, at medium heat.
- When boiling, turn the heat down to medium low.
- Place the lid on the pot, keeping it tilted to allow steam to escape.
- When you can see holes or "craters" in the rice, put the lid on tight.
- Turn the heat to low.
- Simmer for another 15 minutes.
- Fluff up rice and serve.

In the Spirit of Guinness...
Here's the facts behind two arguments I've had in the last week:
Youngest mother (at the Kelly's house over Chicken Pot Pie)? A 5-year-old Peruvian girl. Snopes says it's true, and I believe them. Ew.
Does cold water boil faster (with Cassie in our kitchen)? Nope, but they do take approximately the same time. An article on it (here).
